Two Serving Healthy Monster Cookies

Hello YourHealthyChicks readers! This is Brianna Strahm from Don’t Eat Crap. I met Carolyn & Katie fairly quickly after starting my blog and I couldn’t be happier to contribute to Yourhealthychicks.

Don’t Eat Crap has been a sounding board to share my healthy recipes, fitness experiences and food tips. In between all that good stuff I talk about life’s adventures including my upcoming wedding with the occasional Puggle photo.

But enough about me, today I want to share with you a killer cookie recipe. My “Two Serving Healthy Monster Cookies” will rock your socks off. This definitely could make one serving if you’re like me and love Monster Cookies or you can multiply this bad boy and please your entire family. I designed this recipe with my fiancé and I in mind. We like our sweets, but we know we can’t have dozens of cookies around the house.

Two Serving Healthy Monster Cookies

Serves: 2 Calories: 170 for 2 cookies

Ingredients:

  • 1 tsp ground flax
  • 3 tsp water
  • 1 tbs + 1 tsp brown sugar
  • 1 tbs zero calorie sweetener
  • 1/4 tsp vanilla
  • 1/4 tsp light corn syrup
  • ¼ tsp baking soda
  • 1 tsp + 1/2 tsp Brummel & Brown yogurt butter
  • 1/4 c. quick oats
  • 1 tbs semi-sweet chocolate chips (mini chips would be better)
  • 1 tbs mini M&Ms
  • 2 tbs powdered peanut butter
  • 1 tbs water

Preheat oven to 350 degrees.

In a mixing bowl, mix together ground flax and 3 tsp water. Add the remaining ingredients in order, mixing well.

Use a tablespoon to scoop out four equal sized cookies. I used a piece of parchment paper so I wouldn’t dirty the pan.  Hooray for less dirty dishes!

Bake for 12-15 minutes. Be sure not to over bake these cookies. They will look a little underdone with you take them out of the oven. Let them cool on the baking sheet for a few minutes and then enjoy! They are delicious, I promise.

Now I’ll be heading back to Don’t Eat Crap. See you later!
